Marinated Pok Choy

4 heads, pok choy, cut in quarters lengthwise and soaked in luke warm water to remove dirt
1 Tb minced ginger
4 garlic cloves, minced
1/2 jalapeno or other mild hot pepper, deseeded and minced
4 scallions, thinly sliced
1/4 cup soy sauce
2 Tb rice wine vinegar
1/4 cup extra virgin olive oil

  1. Bring a tall pot of salted water (about 1 tb salt per gallon) to a rapid boil.
  2. Combine 1 quart of ice with 4 cups of water to make an ice bath.
  3. After well cleaning the pok choy, add to boiling water and cook for 1 minute, pok choy should remain crunchy.
  4. Remove and immediately plunge in ice bath. Keep in ice bath until very cold. Then remove and drain on papper towels until dry.
  5. In bowl combine remaining ingredients.
  6. Once pok choy is dry pour marinade over pok choy and let sit for 15 minutes and then serve.
