Turnip-Apple Puree

4 Tb butter
1 onion, minced
2 garlic cloves, minced
1 # turnips, peeled and cut into ! inch chunks
2 apples, peeled and cored and cut into slices
1/2 gallon milk
3 tsp salt
1/4 tsp ground black pepper

  1. In large sauce pot, heat butter.
  2. Add onions and garlic and 1 tsp salt. Sweat until onions are translucent.
  3. Add remaining ingredients and simmer for 1 hour or until turnips are tender.
  4. Cool and strain liquid and save liquid.
  5. Puree turnips with a little of the cooking liquid and adjust seasonings accordingly.
