Growing Hops at Gibbet Hill Farm

Hops cones on a mature plant.
Hops on our trellis.

At Gibbet Hill, we grow hops not just for brewing, but to inspire both our bar and kitchen teams in fresh, creative ways.

Behind the bar, hops are infused into spirits and syrups or used as an aromatic garnish. In the kitchen, they show up in compound butters, sauces, vinaigrettes, and more—bringing a bright, herbal twist to seasonal dishes.

Gibbet Hill Farm Dinners • 2025

Tickets for 2025 Gibbet Hill Farm Dinners are now on sale for July 16, July 30, August 13, August 27, September 10, and September 11.

Join us for an enchanting evening at Gibbet Hill. Immerse yourself in the rustic charm of this picturesque countryside setting, and indulge in a memorable farm dinner like no other.

This culinary adventure begins on the farm for a cocktail hour featuring farm cocktails and hors d’oeuvres, alongside our crops. Members of our farm team are on site to give tours and answer any questions. For dinner, stroll back to the deck at The Barn and engage in lively conversations with fellow diners, as you savor each bite of the exquisite farm-to-table fare at a seated, three-course meal.

MENU

Our chef will start planning the menu just a day or so ahead of time, after determining which vegetables and fruits are ready for harvest. Due to the nature of this type of menu planning, we may not have a finalized menu until the day of the dinner. We can accommodate allergies, but with the style of this dinner, we will not know the modifications in advance. This dinner is an adventure and will primarily showcase items coming from our farm. Dinner will be four courses (three courses, in a combination of family-style and plated, plus cocktail hour tastes). Beverages will be provided and will include beer, wine and soft drinks.

PLAN YOUR VISIT

Seats are very limited for this event, as we will only be hosting up to 40 guests per dinner at one long farm table. Be sure to wear appropriate shoes, as a portion of this dinner will be held on the farm grounds. NOTE: Assistance will be provided for anyone unable to navigate the dirt road to the farm tables.

Introducing our newest Field School program: the GHF Young Farmer’s Club, a hands-on, eight-week farming adventure just for kids! Young farmers will prepare their own special plot at Gibbet Hill Farm, plant seeds, care for their crops, and harvest the vegetables they grew from start to finish. A perfect way to dig in, get your hands dirty, and learn where food comes from!
This program is designed for children ages 10yo-13yo*.
The program runs June 24-August 12 on Tuesdays at 9am, culminating in a farm-to-fork lunch on August 12 for each student plus one guest, featuring some of the fresh ingredients they nurtured.
Each student will receive a Gibbet Hill Farm Field School tote and a Young Farmer’s Club t-shirt.
Cost for this workshop program is $200.00
Enrollment is very limited, to maintain the highest quality experience for each student.
Classes will run for approximately 60-90 minutes.
At the conclusion of each class, students will harvest produce to bring home.
Students should wear farm-appropriate clothing and shoes.  Work/garden gloves are also encouraged if students prefer to work in the dirt with them. Hats or caps are recommended.
